I don't know what it is but I love Casa Rodriguez. I grew up in Celina and moved away. This is my absolute favorite Mexican restaurant and I have eaten in the city square of Monterey, MX. I don't know if it is really that good or just because of high school nostalgia. Today I had 2 tacos, an enchilada and deep fried ice cream.
The enchiladas her are absolutely the best. The sauce can not be duplicated. What really shines is the ground beef. It is seasoned perfectly. I don't know how they do it but the ground beef combined with the enchilada sauce and some of their great hot sauce should be their signature dish.
The tacos were also great. They had a ton of the above mentioned ground beef combined with fresh lettuce and tomatoes again I had hot sauce.
I don't know it for a fact but they must hand make their tortillas as they taste very fresh.
Finally, I finish up with their fried ice cream. This is traditional Mexican fried ice cream. It tastes ready good and it is worth the diet cheat.
The bottom line is this is one of my favorite restaurants from my high school years and it is just as good as I remember it. When you are in Celina, you should definitely make it a point to eat here. -

Have enjoyed Mexican food around the country. This was not enjoyable. The part I did like is the military pictures. Menu needs to change and someone that can cook Mexican food would be a great for the celina area.

First time at Casa Rodriguez. The service was excellent and the food was even better. We had the Steak Fajita for two and a fresh House Salads. The steak was extremely tender and well prepared. The quality and quantity was perfect. They provided 4 wraps each, most places only bring you 3. The tomatoes and onions and cheese was also fresh and in good quantity. Our waitress was very attentive. This is a hidden jewel in Celina.

The service was acceptable and that was the best part. The salsa was bland and tasted like out if the jar. I could eat mexican food everyday, but not this. The guacamole was very bland. Possibly the worst Mexican food I've had. Taco bell would have been better.
